What's Betty Eating Now?

Hi My Betty Peeps!

Sorry I have been away.  Last Sunday I had a very dramatic incident at the dog park here in town.

Without going into too much detail, let's just say I walked away from the whole thing with a bruised shoulder, a bleeding knee and a bleeding hand AND a sprained wrist.

No, No.  I don't want to talk about it.

I just think for the sake of all, we need to put this incident behind us and go on.

(OK, OK, I fell off of a curb in the parking lot!  What's with gravity these days? Is it feeling stronger to you?)

Anyway, I have not been able to write very much and blog posts are starting to building up in my brain.

Danger!  Step back from the Betty!

Here's a salad I have been snarfing down this summer.  Hope you enjoy it!




Here are the details:

In the food processor chop up about a pound of carrots.

Remove carrots put in a lot of raw kale in the processor and turn it on until you've got little pieces.  (Don't overdo it on the processing of the kale.  You know how you get.)

Mix the kale in with the carrots.

Add sunflower seeds (or pecans).

Proceed with a light coating of Balsamic Vinaigrette or the like.

Feeling especially kicky?  You can add avocado or tofu too.




Lately, I've been adding black lentils too!  Crazy good!

Two warnings:

1)  Check your teeth in a mirror after consuming this salad.  Use your Waterpik if you have one for a real Jackson Pollock experience in the sink afterwards.

2)  This is the Roto Rooter of salads.  Don't overdo it.  You know what I am saying.

As soon as my wrist is feeling better I will be back with gusto!  Until then, enjoy these shorter posts!

First the ankle, now this... poor Betty! Bless your heart, what next? [of course actually ingesting stuff like that may be part of the problem... wheres the meat? wheres the taters?!? Cant keep enough strength up to contend with gravity on that... :) ]

Owie. I can see why you don't want to discuss "the incident." I'm guessing someone pushed you....

Can we substitute Cheetos for the carrots? Same color....

Awwww BB!!!! Bad bad bad gravity!! Bad!!! Oh dear!! Well you rest and relax and get better!! This wonderful salad is just right to help you along! Fantastic! I recently discovered curly kale and though I've only ever eaten this steamed I think I should now try it raw!! With tofu! YUM!!!

How high do they build curbs out there? I was relieved to read what really happened, because I was imagining you trying to break up a dog fight, falling to the ground and lying there bleeding gently, while Kia stood over you mounting a scrappy defense.

I hate when that happens and lately, it has happen a lot. The falling part, well and the kale too, it's not something I've ever developed a taste for. Reminds me of grass.....

Sorry to hear about your spill, gravity and curbs don't play well together.

The salad looks delicious. I just bought some kale so maybe I'll give it a try.

For such short things, curbs can cause some real damage. Hope you heal quickly and stay well the rest of the summer!

sorry about the curb incident. I've noticed that lately there seem to be rather large objects (invisible ones at that) laying right in the path I'm walking. Being invisible I of course trip over them constantly.
Maybe I need a roto rooter salad

BB I'm so sorry about your fall.
It must have hurt your pride as much as your body! I stepped off a curb onto a pine cone many years ago....did not fall but I think I strained every muscle, tendon etc in my ankle and right foot. Terribly swollen. It was months before I felt no pain in it.

Oh Betty - it's probably those eyes again - or was it the glasses .. perhaps you didn't have them on .. and the memory forgot the curb and the glasses?

However - I hope that all heals fairly quickly .. a great nuisance ... but the salad should sending healing waves around the body ..

I've been away and still cannot commit to regular visits just yet...we have had a hectic year this year (and we are finally half way through) with all kinds of family events, births, weddings etc....but I wanted to pop in and see what's shakin'.

Sorry to hear about your fall off the curb....I have been battling my back and still am dealing with the tendonitis and lump in my right arm...which is a real challenge when I am right handed...I spend a lot of time with ICE PACKS on my arm. I suppose to be "timing myself" on the computer. I tell ya, it is HELL getting old.

Hang in there girlfriend...I am still a fan and a friend.

Yep! Gravity sucks!
"Stronger" gravity is nature's way of telling us to slow down and watch the heck where we are stepping. Hope you heal up soon.

Other than the nasty tasting raw kale, the salad sounds great!
