Itching for the Spinach



If someone would have told me a few years ago that I would be eating cooked spinach and enjoying it, I would have never believed it.

After all, this is the stuff I used to hide in my milk carton at lunch in 4th grade.  

Do you remember the cooked spinach they used to serve us at school?

 Bleech!



All it takes is fresh spinach, garlic, olive oil, and lemon.



Chop up the spinach some.  Then heat some olive oil and a clove of garlic in a skillet. 
(As you can see, I use frozen garlic blobs.  They're great!)  

Add the spinach and saute lightly. 

Don't overdo it!  

You know how you get.

Control yourself.



Serve immediately and squeeze some fresh lemon over it.

This is yummy stuff!   Who knew?

OK I am laughing here because my son cooked fresh spinach Monday night just the way you fixed it.
It still tasted as gross as I remembered it from childhood ;o)

WTG BB...Olive Oil and Popeye would be very proud of your culinary skills.

I love spinach but I've never been able to understand why folks put boiled eggs on it??!!

Miss Chef has been trying to convince me of this for years. I still prefer my spinach surrounded by eggy custard or drowned in hollandaise.

Hated it as a kid, but I've had it the way you describe and it's great. Good in salads and pasta as well.

I always like it as a salad and put some vinegar occasionally when cookked, but this sounds real good.It is a easy one to grow.

I'm a freak, I've always loved spinach. Even as a kid. Maybe I was just brainwashed by Popeye into loving it. That looks really good too. I love a simple striking flavor. I'll have to give it a try.

Love spinach, always have. This looks like a dish I would really like. The spinach that came in cans that they served us as kids was just nasty and slimy, but I did eat it. I guess I fell for the line that it was good for you.

Oooh YUM! I just juiced a bunch of spinach along with some other good things: cucumber, ginger, lemon, tomato. I also hated spinach as a kid but love it now :)

I guess Popeye had something there, didn't he? But even he would bow down to your spinach as compared to his in a can. Good stuff. Garlic turns just about anything into a miracle.

That's how I cook my spinach, except for the lemon juice part. Now I have to try that!

Have you tried cooking it with mushrooms? We make spinach and mushroom quesadillas (no cheese) once a week. Super yummy. I use a little bit of butter to cook the tortilla.

My mom used to boil the crap out of spinach. Spinach, and all other vegetables. It took me years to get over hating them. Now I love 'em!

I'm not sure I could get past the memory of that slimy nastiness from school days to try cooked spinach again. I love raw spinach salads though. :)

I'll have to make and share my spinach bread! Similar to what you did, but no lemon and some added Parmesan! Damn, now I am craving it...lol :D

It sounds delicious. I like spinach already and add it to omelets and make salads with it and even use fresh spinach in place of lettuce on sandwiches. I am glad that you have tried something that was new for you and found a new taste sensation.

Yum.. I love spinach and that's almost exactly how I cook it. I sometimes add a bit of nutmeg. And I almost always add a splash of white wine while it cooks. I learned to like spinach by eating it raw, first.. in yummy salads.

spinach is one of those foods that I never liked until I actually tried it. I like it with a little bit of oil and vinegar and a chopped up hard boiled egg
